WILD DIAMOND VINEYARD • LAKE COUNTY
STORY: A special new single-vineyard bottling for us. Planted by winemaker extraordinaire Bruce Regalia, this SB fruit grows on a remote mountain top at an elevation of 2,200 feet. Blessed with a temperate climate and an abundance of California sunshine, the grapes achieve remarkable ripeness at relatively low sugars. This dynamic tends to moderate alcohol levels, making for a fresh and fruity wine that doesn't sneak up on you. Pairs with basil pesto pasta, fresh oysters, bread and cheese, chips and dip, and fried chicken.
VINIFICATION: We like to ferment the SB in a combination of small stainless steel barrels and neutral French oak. We also use a wide variety of exotic yeast strains to bring multilayered complexity to the blend.
ELEVAGE: 6 months, sur lees.

TASTING NOTES—Aromas of lemon zest, honeysuckle, coconut, pastry icing, kiwi, yellow starburst, spearmint, apple pie, and a hint of cinnamon. On the palate, a near perfect balance of acidity brings a lively menagerie of apricot nectar, mandarin orange, tangerine popsicle, fruit cocktail, grapefruit, taffy, and fresh hay. (Enjoy 2024 - 2033)
