2021 OLABISI PINOT NOIR RUSSIAN RIVER VALLEY

SONOMA COUNTY

STORY: The fruit for this wine comes from a tiny hillside vineyard on the easternmost corner of Sonoma's Russian River Valley appellation. The effects of this particular microclimate tend to create supremely balanced and focused Pinot Noir. As is our tradition, all three vineyard blocks were fermented separately on wild yeast, in open-top fermenters then pressed directly to barrel, 30% new french oak, where the wine sat undisturbed for 15 months. Bottled unfined and unfiltered, this beauty is ready to be the featured player when dinner is served. Pairs with pork tenderloin, sautéed mushrooms, olive oil poached chicken breast, whole roasted fish, and exotic cheeses.

VINIFICATION:: Gently destemmed, leaving the berries whole. Open top fermeters. Wild yeast. Gently punched down by hand. Gently pressed to barrel.

TASTING NOTES – Luxuriously layered aromatics of homemade strawberry jam, cherry plum, orange zest, marshmallow, cardamom, garden roses, strawberry rhubarb pie, toasted sesame, ocean mist, and forrest floor. The palate is full and juicy with fresh cherries, rich caramel, light roasted coffee, root beer, white pepper, and a lengthy finish of dried strawberry, and pipe tobacco. (Enjoy 2024 - 2035)
