VINIFICATION: We like to ferment the SB in a combination of small stainless steel barrels and neutral French oak. We also use a wide variety of exotic yeast strains to bring multilayered complexity to the blend.
ELEVAGE: 7 months, sur lees.
PRODUCTION: 85 cases
TASTING NOTES: Super lively, intense, and focused. Aromas of Key lime pie, honeysuckle, tangerine, lemon zest. And a refreshing palate of green apple, lemon sorbet, saltwater taffy, creme fraiche, and white plum. Plenty of crispness to pair well with basil pesto pasta, french bread and cheese, beet salad, margarita pizza, and good times. Drink now through 2024.
